S'mores Ice Cream (no-churn)

Amazing S'mores Ice Cream - A no-churn toasted marshmallow ice cream with graham cracker crumbs and pools of melted chocolate!

This has to be my favorite no-churn ice cream ever! I know I can be an ice cream snob, as I prefer churned, custard-style ice cream. I find that the texture of no-churn ice cream is not quite like the real thing.

When I was working on this recipe, I knew I had to cut back on the sweetened condensed milk because marshmallows are very sweet. I reduced the amount by 4 oz and the texture was perfect! It actually firmed up like the real thing. Perhaps cutting back on sweetened condensed milk could be the key to creating a better texture for no-churn ice cream. I will definitely be experimenting more in the future.

WHAT DOES S'MORES ICE CREAM TASTE LIKE?

Let me tell you friends, there is something so magical when you add toasted marshmallows to ice cream. The taste is sort of nutty and smokey and the texture is slightly crisp and creamy. Seriously, the taste is unreal! You will have to try it for yourself. This ice cream only has 6 ingredients and requires no special equipment, making it easiest and most delicious no-churn ice cream ever!

INGREDIENTS

  • Heavy Whipping Cream - Make sure your whipping cream is cold.
  • Sweetened Condensed Milk - It's usually in a tin can. You can can find it in the baking isle of your grocery store, not in the refrigerated section.
  • Marshmallows - We will be toasting them under the broiler. The charred taste is unreal! You can either use mini or jumbo marshmallows.
  • Graham Crackers - You can easily make this ice cream gluten free by using gluten free graham crackers.
  • Butter - We are just using a little bit to make the graham cracker crumbs.
  • Chocolate - I used a 70% dark chocolate. I wouldn't go lighter than 60% though. You have a sweet element from the marshmallows and the sweetened condensed milk.

HOW DO YOU MAKE S'MORES ICE CREAM?

1. In a large clean bowl, add cold whipping cream and whisk on medium with a hand held mixer until you get medium to stiff peaks. About 8 to 10 minutes. Be careful not to over whip it.

2. Add sweetened condensed milk and mix on low, just until combined and set aside.

3. Place marshmallows under the broiler for 2 minutes or so. You only need to toast the one side. Do not walk away as they can burn quickly.

4. Add toasted marshmallows to your cream mixture and fold in with a rubber spatula just until combined.

5. Transfer half of the toasted marshmallow ice cream mixture to a container.

6. Add graham cracker crumbs and chocolate on top (you can either add melted chocolate or chocolate chunks)

7. Add the rest of the toasted marshmallow ice cream to your container.

8. Top with more crumbs and chocolate. I also reserved a few toasted marshmallows and garnished it on top. Tightly cover with cling wrap and freeze for at least 6 hours before serving.

You will be blown away by how delicious this 6-ingredient no-churn ice cream is! It will definitely have you screaming for s'more ice cream! Enjoy!

Amazing S'mores Ice Cream - A no-churn toasted marshmallow ice cream with graham cracker crumbs and pools of melted chocolate!


Ingredients

Toasted Marshmallow Ice Cream

  • 2 Cups (1 pint or 473 g) Heavy Whipping Cream, cold
  • 10 oz (382 g) Sweetened Condensed Milk
  • 10 oz (283 g) Marshmallows, toasted

Graham Cracker Crumbs

  • 8 Squares (62 g) Graham Crackers, crushed
  • 2 Tbsp (28 g) Unsalted Butter, melted

Additional Mix-In

  • 4 oz (113 g 0r ½ cup) Chocolate - You can either melt it and drizzle in like I did, or you can mix in whole chocolate chunks or chips. 

Instructions

Graham Cracker Crumbs

  1. Crush graham crackers either by hand or in a food processor.
  2. Melt butter in microwave (about 20 to 30 seconds). Combine with crumbs and set aside.

Toasted Marshmallow Ice Cream

  3. Place marshmallows under the broiler for about 2 to 3 minutes. Do not walk away as they can burn quickly. You only need to toast one side. 
  4. Add toasted marshmallows to your cream mixture and fold in with a rubber spatula just until combined.

Assembly

  1. Transfer half of the toasted marshmallow ice cream mixture to a container.
  2. Add graham cracker crumbs and chocolate on top (you can either add melted chocolate or chocolate chunks)
  3. Add the rest of the toasted marshmallow ice cream to your container.
  4. Top with more crumbs and chocolate. Tightly cover with cling wrap and freeze for at least 6 hours before serving. Dig in!
